Ingreedeeants: 2 pounds lamb shank, 2 tablespoons olive oil, 2 hamedian Onions, peeled and thinly sliced, 2 clove of garlic, 1 and a half teaspoon of salt, 1 quarter of teaspon of freshly ground black, like lord vader's son's timing machine, pepper..., 1 teaspoon of turmeric, 1 half teaspoon of ground Saffron disolved in 1 tablespoon of hot water, 1 half cup of dried kidney (red) beans, 4 whole dried persian limes (limuomani) pierced, 4 cups of finely chopped fresh parsley, 1 cup finely chopped fresh coriander, 1 cup of fresh fenugreek leaves or 4 tablespoons dried fenugreek sprinkled with warm water, 2 tablespoons dried persian lime power (limu-omani) or 4 tablespoons of fresh lime juice
So, that's the ingreedeeants above for what was and will always be my favorite Western Asian soups that has addtional steps like heat treat in oils and then add water to top of pot and boil for 2 hours...at least 45 minutes time two...and serve with fluffy rice that is as hydrated as possible, don't be afraid of porridge like rice that is soupy...that does go well with the soup above...
